something yummy.

okay, maybe i just want to be cool like most of you who put your menus and wonderful recipes on your blog. i'm impressed. really.
i have a hard time with meals and those who know me well, know i joke often about not cooking. in reality, i think i actually like to cook.
my issues are these:
~i don't like to cook with hungry, whiny kids. and i don't know any kids that don't turn into that at the "mama should be cooking" hour. i look forward to hungrier big kids who hopefully will like spicier foods. :)
~ i'm not naturally a planner. it's usually somewhere around 4:30 that i start to wonder what we're all going to eat that night. (i don't really recommend this when 5 other people are expecting to be fed by you.)
~related to planning, i never shop with a list. many times as i'm leaving the store, i survey the contents of my shopping cart and wonder if there is any dinner food hiding under the cereal boxes, coffee creamer and bread.

so, no wonder i think i don't like cooking...
but i am trying to combat my natural tendencies. because, frankly, i get tired of eating kid food. and i want my family to have decent meals from time to time.
one of my plans is to do one crock pot meal a week. the ideal time is wednesday... when nic has basketball practice from 5-6... and i love crock pot meals because i can do it when the older two are at school.
anyway, everyone but the basketball player liked this one.
so here you go.
now, i have a cool recipe on my blog.

MOROCCAN CHICKEN
(serves 8)

3 chicken breasts (cut)
2 cans garbanzo beans (16 oz.)
1 small red pepper (chopped)
1 red onion (chopped)
1/3 C raisins
2T tomato paste
4T water
3 cloves garlic (minced)
3 chicken bouillon cubes
2 tsp cumin
1 can whole tomatoes (28oz)
3T peanut butter

Combine all ingredients but tomatoes and peanut butter in slow cooker; mix well. Cook on low 5-7 hours or high 2 1/2 hours. Add tomatoes and peanut butter; continue cooking for 30 minutes, checking that the chicken is thoroughly cooked. Great served over rice.

don't be fooled...i don't always plan my weekly menus either ;) this does look yummy! maybe i'll sub some soy butter for the pnut butter since s has an allergy and give this one a try!

you're funny. this one sounds interesting, but i'm not a craisin fan...maybe i'll try to branch out though. i always thought we ate great when we're there. you are always so creative with your salads and just coming up with something on the fly. plus allen loves your leftover surprise nights. :)

Sounds yummy. I only post my ambitious menus. I don't post about the weeks where we eat chili dogs and eggs and bacon. (Not all together, mind you.) :)

I love crock pot recipes, but my crock pot cookbook would be found beneath the label of 'Comfort Food'..... therefore I don't do a lot of cooking from it. This one sounds pretty healthy.... I'm going to try it.. I'll let you know how it turns out! :)
